when to pollard?

:confused1:Right, this may seem a simple question to most but i've got a few youngish (approx 8-10" in diameter 1meter from the ground) and want to cut them to make them into pollarding tree's. I love the old tree's we have that are ancient pollards for firewood, they produce good ash firewood and the tree gets to live. But i want to know do i just go and cut the the tops straight off at say 12feet or is it a bit more technical than that?:confused1:
