grinding with ingrown wire

A small hand held grinder would munch it .

Snip out the most of the wire by hand before you start

I would be more concerned about the concrete that's most likely holding the fence post.

I'm asking if stump grinding with bits of wire grown into the stumps poses much danger to machine and opetator, i know a hedge flail is a different beast to a padestrian grinder, but remember hearing of a fatal accident with barbed wire being thrown at operator through rear window

Stump grinding is dangerous.

Do what you thinks best

I would cut the wire back to the stump pull it out of the way then grind the stump.

Cut the worst of it away from the stumps so it can’t wrap around the wheel and check for old concrete post stumps with reinforcement.

Any decent grinder (certainly not the one in the photo) will rip those stumps to shreds,  the wire won’t be an issue as long as you are operating the machine in the recommended work position.
