  1. Hot and cold. It is a gravity smoker, there is a large chute on the top right that you fill with charcoal. Bottom right, near the dally, is a door at the bottom of the chute where wood is put in to burn. The top and side doors to the chute are closed and air flow controlled with a ball valve and fan (comp controlled) which allows temps to be held to with a degree or so. Huge thermal mass helps with that to, I reckon 1/2 tonne ?. Heat smoke moves from chute into cooking chamber and out the top. For cold smoking I just place the smoke generator where the wood would normally go. It can cook a LOT at once, there are 5 large cooking trays, each about 1m *70cn
  2. Really? All the pics I have seen online look more like the knarled pear logs.
  3. Ok I am pretty sure 1, 2 is cherry. 3,4 is maple 5,6,7, 12 is pear. Which leaves 8,9,10 and 11 (same logs as in top pic of my second set of pics) which I think I was told was red oak, is that right? Edit Looking online, that doesn't look look like red oak, is that just larger maple logs? I would like to know as I want to smoke some food with the logs. The food would be ruined if I use some unsuitable wood
  4. Hope they are not sweet chestnut or sycamore...any other ideas? Which one do you think is pear?
  5. First two I think are cherry. One of the others I was told was Maple but cannot remember which.
