Lemon Curd?

Whilst digging a woodland track the other day, through a blackthorn thicket, noticed something very odd indeed.

 

As the digger bucket withdrew, I saw a lemon curd like substance which filled the interior of a damaged blackthorn root. Jelly like and 'lemon curdy' in colour.

 

I wondered if any of you knowledgeble chaps/chapesses could help in identifying said jelly?

Yep, similar. Mine appeared paler coloured more like a battery egg yolk than a garden chicken egg yolk (but that may be the pic). I'm sure/I think you could JUST see remnants of the internal structure of the root, but the walls were still intact. No above ground fungus noticed, but to be fair I wasnt searching.

 

Pray tell???????????
