Old unhappy apples

I am clearing an overgrown garden which has two unhappy overgrown apple trees

 

they have a lot of dead branches

 

would it be ok to cut the dead wood back to live wood now when it’s easy to spot ?

 

or best to leave it all until winter ?

when I would also start to prune them gradually over a two or three winters

 

any tips appreciated

I’d take the dead out now and start pruning out live in the centre of the tree, apples need good air flow, cut back 1/3 of outer branches, unless already laden with fruit, and reduce again next year if required.
Check the variety though, eating/cooking. [emoji1303]
