Even if you turn Siri off in your phone will still listen to you. Worst culprit would probably be WhatsApp, owned by Facebook.
A friend and I were recently discussing fencing, (the sword fighting type)
I started getting LOTS of ads for field and garden fence products popping up on my phone. That sort of thing has been going on for ages. Bound to be the tip of the iceberg when it comes to surveillance from the intelligence agencies.

I mostly send jokes on whatsapp  . Its never told me a joke ....
