I’m sticking with Bay. Good screening, quick growing, pretty hardy and ultimately easy to keep on top of.

I's stick a rosemary or two in, and some thyme plants to completely cover the soil which will help stop it drying out. If you can stick a sage somewhere else in the garden... you are good for bouquet garni. None need any great attention and the rosemary will stand unskilled pruning, as will the bay.
