I think you’re being far too pessimistic there; Oak is not as slow as you might think. I’ve planted hundreds of them, but always as trees.

Beech hedges are lovely but there’s rather a lot about ( we go a bit blind to them). Hornbeam are slightly more up market and will show a similar colour to  Oak in autumn !

Also double staggered planting would be much better than a single row ! Good luck ! you’l get a very very posh hedge. And add value to your property!!

Scott’s pine is not happy being shaded .. there was a pretty big black current bush in front and to the back the sheep every winter try and get there fill off it... apparently though pine hedges where all the thing back when game shooting first started... flat norfolk ground with pine hedge breaks to get the birds up on a drive where what they had been planted for , there are a few still there on elvedon estates land.
The history to the estates shoot is pretty fascinating if you have time to research.
Holm oak , I’m sure is not uncommon as a hedge though again bloody sheep like eating it!
