So when is the sap down?

We're told to cut firewood 'in the Winter,  when the sap's down'.

I cut a couple of sycamore last weekend and the sap was p155ing out of them.

Was I too early? too late?

It's not you, the climates not playing by mans 'rules'!
I dismantled a big ash the week before Xmas and sap was pouring out. We used to fell sycamore for a sawyer who would only have it done between 1 December n end of January, dunno what he'd do now
