I have 4 inch boards with a 4 inch gap. The key is lots of overhang on the roof. My timber very rarely gets any rain on it and I think that the extra air more than compensates for it. I can do you 150x25mm timber (poplar) for 25 pence a foot if you're interested.

Ay appn lad. I agree with most of what you,r saying nice over hang on the roof. Sides i use off cut.s (ripped) for about 1" to 3" do,nt matter if its waney either. I have made curtains yes curtains which i can roll down if windy and wet. If you have hedges trees or walls if you build your store near them then the rain less likely to get on the wood. Keep a good air gap under to. I have at least 300mm off the ground. I am also using 1" and 2" steel mesh for base and some of the sides to.
